Ingredients:

  • 2 large sweet potatoes
  • 1 tin black beans (drained and rinsed)
  • 1 tin lentils (drained)
  • 1 red onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 cup vegetable stock
  • Salt & pepper to taste
  • Fresh coriander to garnish


Method:

  1. Preheat your oven to 200°C (400°F). Peel and chop the sweet potatoes, then boil them in salted water until soft (about 15 minutes). Mash them with a bit of salt and pepper, and set aside.
  2. While the potatoes cook, heat a bit of olive oil in a large pan. Add the chopped onion and garlic and cook until softened. Stir in cumin, smoked paprika, black beans, and lentils.
  3. Add the vegetable stock and simmer for about 10 minutes, allowing the flavours to meld together.
  4. Transfer the bean and lentil mixture to a baking dish. Spread the mashed sweet potato on top and bake for 20 minutes until the top is golden and slightly crispy.
  5. Garnish with fresh coriander before serving.

Ingredients:

  • 1 pack vegan sausages
  • 1 can white beans (drained)
  • 2 cans chopped tomatoes
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tbsp tomato purée
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • 1 vegetable stock cube
  • Olive oil for cooking
  • Salt & pepper to taste


Method:

  1. Start by browning the vegan sausages in a pan with a bit of olive oil. Once browned, remove them from the pan and set aside.
  2. In the same pan, add more olive oil if needed and sauté the chopped onion until soft. Add the minced garlic and cook for another minute.
  3. Stir in the tomato purée, smoked paprika, and thyme, cooking for a further 2 minutes to release the flavours.
  4. Add the chopped tomatoes, white beans, and crumbled vegetable stock cube. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the sauce to thicken.
  5. Return the vegan sausages to the pan and cook for another 5 minutes to heat through.
  6. Season with salt and pepper to taste, and serve with crusty bread.

  • 2 cups vegetable stock
  • 1 tbsp soy sauce
  • 1 block tofu (cubed and roasted)
  • 1 carrot (julienned)
  • 1 pack ramen noodles
  • 1 handful spinach
  • 2 garlic cloves (minced)
  • 1 tbsp sesame oil
  • Fresh spring onions and sesame seeds to garnish


Method:

  1. Start by roasting the tofu. Preheat the oven to 180°C (350°F). Toss tofu cubes in a bit of sesame oil and bake for 20-25 minutes until crispy.
  2. In a large pot, heat sesame oil over medium heat and sauté the minced garlic for about 1 minute.
  3. Add the vegetable stock, soy sauce, and white miso paste, stirring until the miso has dissolved. Simmer for 5-10 minutes.
  4. Cook the ramen noodles according to the package instructions. Drain and set aside.
  5. To serve, divide the noodles between bowls, pour the broth over them, and top with roasted tofu, julienned carrots, spinach, spring onions, and sesame seeds.

  3. Pour the sauce over the cooked pasta and mix well. Transfer the pasta to a baking dish and sprinkle with breadcrumbs.
  4. Bake for 20 minutes until the top is golden and crispy.
  5. Serve immediately and enjoy that creamy, cheesy goodness!

  4. While the stew simmers, make the dumplings by mixing the self-rising flour, olive oil, and a pinch of salt in a bowl. Add a little water to form a dough, then shape into small balls.

  5. Drop the dumplings into the stew and cook for an additional 15 minutes, or until they puff up and become light.

  6. Season the stew with salt and pepper before serving.
