Method:
- Preheat your oven to 200°C (400°F). Peel and chop the sweet potatoes, then boil them in salted water until soft (about 15 minutes). Mash them with a bit of salt and pepper, and set aside.
- While the potatoes cook, heat a bit of olive oil in a large pan. Add the chopped onion and garlic and cook until softened. Stir in cumin, smoked paprika, black beans, and lentils.
- Add the vegetable stock and simmer for about 10 minutes, allowing the flavours to meld together.
- Transfer the bean and lentil mixture to a baking dish. Spread the mashed sweet potato on top and bake for 20 minutes until the top is golden and slightly crispy.
- Garnish with fresh coriander before serving.

- 1 vegetable stock cube

Method:

- Add the chopped tomatoes, white beans, and crumbled vegetable stock cube. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the sauce to thicken.
- Return the vegan sausages to the pan and cook for another 5 minutes to heat through.
- Season with salt and pepper to taste, and serve with crusty bread.
